Carrot Snack

Ingredients
3-5 Large carrots
1tbsp Olive oil
1 fresh lime
1tsp Apple cider vinegar
½ tsp ground coriander
1/8 tsp Cayenne pepper (optional)
¼ tsp kosher salt
Optional extras:
2 tbsp chopped parsley
2tsp sesame seeds
1 tbsp chopped cilantro or mint
Method
Peel carrots and slice into thin slices.
Mix all the other ingredients together in a large bowl.
Add the carrots to the bowl and make sure that the liquid completely covers it.
Leave it overnight in the refrigerator.
Notes
Delicious addition to any salad or wrap. Can also be enjoyed as a snack.
